Watermelon is the summer’s hydrating, nutrient-dense fruit. It’s 92 percent water and delivers high amounts of vitamin C and A, potassium and magnesium as well as lycopene (also found in tomatoes and may help to reduce the risk of prostate cancer).
The watermelon rind—specifically the pale, white flesh between the pink fruit and the outer green skin—is a nutritional powerhouse packed with fiber, vitamin C and the amino acid L-citrulline, which promotes nitric oxide production for better circulation, muscle recovery, heart health and sex! Organic fruit is always the better option because it’s grown without synthetic pesticides, limits exposure to chemical residues, supports sustainable soil health and often yields a more naturally ripened, flavorful melon.
A favorite summer recipe of mine before, after, or as the main course is watermelon salad with feta (packed with protein), basil, plus some delicious cell-protecting polyphenols and antioxidants like blueberries, a drizzle of balsamic vinegar, and a dash of paprika. Load up on these immune-boosting ingredients as we enter the cooler, viral months ahead.
