Bagatelle Montauk Marina

The St. Tropez-style festive bistro, which helped popularize the boozy brunch, has taken over Gosman’s Dock, bringing delicious French fare to the room with a view. 500 W. Lake Drive, Montauk; bagatelle.com

Sea Salt at Solé East

A seafood-focused Mediterranean helmed by chef Melissa O’Donnell will occupy the hotel’s dining room space, offering such dishes as octopus confit with fava, and bouillabaisse chock-full of local catch. 90 Second House Road, Montauk; soleeast.com

Mary Lou’s

This cocktail lounge with small bites was an overnight hit when it opened in West Palm Beach this year, and it is expanding to the former N’Amo Seafood spot in Montauk this season. 474 W. Lake Drive, Montauk; marylousmtk.com

Swifty’s

The longtime Upper East Side clubhouse was reincarnated at The Colony in Palm Beach to great response. Now that The Colony’s owners have taken over The Hedges Inn, Swifty’s is coming along too, and so are its signature crab cakes and meatloaf. 74 James Lane, East Hampton; thehedgeseasthampton.com

Crazy Pizza

Little Charli

Claude’s 

Tip Top Hospitality Group, owners of K Pasa, Kumiso and Smokey Buns, is taking over the restaurant at the Southampton Inn, giving it a face-lift and bringing a new chef and menu that will include big plates like halibut with Thai yellow curry and jasmine rice. 91 Hill St., Southampton; southamptoninn.com

Namiro  

Jesse Matsuoka, an owner of Sen, helped music exec Gary Spangler and his partners Alexis Spangler and Jon Lewis transition former pan-Asian restaurant Bamboo into their new Japanese spot, featuring sashimi and sushi, including the popular crispy rice version, along with dishes like watermelon tuna tartare, lobster udon ramen, and a mushroom hot pot. 76C Jobs Lane, Southampton; namirosushi.com
