Southampton resident Anastasia Ganias-Gellin launched Fancy Peasant with a mission to bring integrity and provenance back to the pantry. Inspired by the blue zone village in Greece where her father lived—a region known for its high concentration of centenarians and diet rooted in medicinal foods—she created a line of medicinal and delicious pantry staples sourced in Greece. What began with organic early-harvest extra-virgin olive oil has expanded into a variety of gut-healthy vinegars, wild mountain oregano salts packed with minerals, and antioxidant-rich raw honeys.

Each product is selected for its nutritional value, bioavailability and connection to long-standing culinary traditions—and packaged with striking elegance that reflects the purity and sensuality of the brand. Through Fancy Peasant’s social media platform, Anastasia shares longevity-focused recipes that inspire others to use these pantry staples with purpose, bringing ancient wellness practices into the modern kitchen. Fancy Peasant is available nationwide in select brick-and-mortar locations like Erewhon, throughout the Hamptons and online at fancypeasant.com.

Greek White Bean Salad

Did you know that people living in all five blue zones consume at least a half-cup of beans daily? That means it is time to get your bean game on, because this superfood is packed with more nutrients and fiber per gram than any other food on Earth.

Ingredients:

1 cup soaked small white beans (soaked overnight)

1 medium red pepper, sliced into thin strips

3 tablespoons fresh flat-leaf parsley

1 small red onion, cut into thin slices

½ cup Greek olives

4 peperoncini

Juice of 1 lemon

1 cup Fancy Peasant Greek EVOO

Method:

1. Cook soaked beans for a half-hour or until soft enough to eat (we like our beans firm but cooked through).

2. Drain and add to a large serving or mixing bowl.

3. Add all the other ingredients.

4. Mix well and serve.
