A cornerstone of Aspen’s dining scene, Matsuhisa Aspen has welcomed locals and visitors since opening in 1998. Housed in a restored 120-year-old Victorian home on Main Street, it was the first Matsuhisa restaurant to open outside the original Beverly Hills location, bringing Chef Nobu Matsuhisa’s celebrated cuisine to the Rocky Mountains.
The restaurant offers two distinct dining experiences. Downstairs, guests dine in an elegant space with bamboo-wrapped ceilings, warm wood accents and a lively sushi bar. Upstairs, a relaxed indoor-outdoor setting provides an intimate atmosphere for sharing sushi, cocktails and mountain views.
Chef Nobu Matsuhisa is renowned for his New Style Japanese cuisine, blending classical Japanese techniques with the bold flavors he discovered while living in Peru and Argentina. Signature dishes include Yellowtail Sashimi with Jalapeño, Whitefish Tiradito and the restaurant’s iconic Black Cod Miso. Sushi lovers will find impeccably fresh seafood, while meat enthusiasts can indulge in premium Wagyu beef.
With attentive service, a warm atmosphere and globally acclaimed cuisine, Matsuhisa Aspen continues to stand among the city’s most sought-after dining destinations, welcoming guests back season after season.
