Greek White Bean Salad
Did you know that people living in all five blue zones consume at least a half-cup of beans daily? That means it is time to get your bean game on, because this superfood is packed with more nutrients and fiber per gram than any other food on Earth.
Ingredients:
1 cup soaked small white beans (soaked overnight)
1 medium red pepper, sliced into thin strips
3 tablespoons fresh flat-leaf parsley
1 small red onion, cut into thin slices
½ cup Greek olives
4 peperoncini
Juice of 1 lemon
1 cup Fancy Peasant Greek EVOO
Method:
1. Cook soaked beans for a half-hour or until soft enough to eat (we like our beans firm but cooked through).
2. Drain and add to a large serving or mixing bowl.
3. Add all the other ingredients.
4. Mix well and serve.
